- Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
- Boil diced potatoes in salted water for 5 minutes, then drain.
- Heat olive oil and butter in a skillet over medium heat.
- Cook sliced sausage until browned. Add onions and cook until softened.
- Stir in garlic and cook briefly until fragrant.
- Combine potatoes, sausage mixture, seasonings, cream, milk, and half the cheese in a large bowl.
- Transfer mixture to baking dish and top with remaining cheese.
- Cover with foil and bake for 35 minutes.
- Remove foil and bake another 20-25 minutes until golden and bubbly.
- Rest for 10 minutes, garnish with parsley, and serve warm.
Notes
For extra crispiness, broil the casserole for 2-3 minutes before serving. You can substitute turkey sausage or spicy sausage for different flavor variations.
