Ingredients
  

Casserole
  • 2 pounds russet potatoes peeled and diced
  • 14 ounces smoked sausage sliced
  • 2 cups cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. Boil diced potatoes in salted water for 5 minutes, then drain.
  3. Heat olive oil and butter in a skillet over medium heat.
  4. Cook sliced sausage until browned. Add onions and cook until softened.
  5. Stir in garlic and cook briefly until fragrant.
  6. Combine potatoes, sausage mixture, seasonings, cream, milk, and half the cheese in a large bowl.
  7. Transfer mixture to baking dish and top with remaining cheese.
  8. Cover with foil and bake for 35 minutes.
  9. Remove foil and bake another 20-25 minutes until golden and bubbly.
  10. Rest for 10 minutes, garnish with parsley, and serve warm.

Notes

For extra crispiness, broil the casserole for 2-3 minutes before serving. You can substitute turkey sausage or spicy sausage for different flavor variations.
