Ingredients
  

Strata
  • 3 cups sweet potatoes peeled and thinly sliced
  • 8 eggs large
  • 1 cup whole milk
  • 0.5 cup heavy cream
  • 1.5 cups cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 1 onion diced
  • 2 tbsp butter
Sauce
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 0.75 cup milk
  • 0.25 cup heavy cream

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Sauté onion in butter until soft; add garlic and remove from heat.
  3. Whisk eggs, milk, cream, and seasonings in a bowl.
  4. Layer sweet potatoes, onions, and cheese in the dish.
  5. Pour egg mixture evenly over layers.
  6. Bake covered 35 minutes, then uncover and bake 25 minutes more.
  7. Prepare sauce by whisking butter, flour, milk, and cream until thickened.
  8. Rest strata 10 minutes, slice, and drizzle with sauce.

Can be assembled a day ahead and baked fresh.
