Ingredients
  

Vegetable Base
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup sliced carrots
  • 1 cup bell peppers diced
Cheese Sauce
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups milk
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded

Method
 

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.
  2. Blanch vegetables briefly until just tender, then drain.
  3. Prepare a roux with butter and flour, then whisk in milk.

  5. Combine vegetables with cheese sauce and transfer to dish.
  6. Bake uncovered until bubbly and golden.
