Ingredients
  

Vegetables
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup sliced carrots
  • 1 cup diced bell peppers
Cheese Sauce
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups milk
  • 2 cups cheddar cheese shredded
  • 1 cup mozzarella cheese shredded

Method
 

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.
  2. Blanch vegetables briefly until tender-crisp and drain well.
  3. Melt butter, add garlic, whisk in flour, then slowly add milk.
  4. Stir in cheese until melted and smooth, then season.
  5. Combine vegetables with cheese sauce and transfer to dish.
  6. Bake uncovered until bubbly and lightly golden.
