  • 24 ladyfingers
  • 1.5 cups cherries fresh or frozen
  • 0.25 cup sugar for cherries
  • 2 cups mascarpone cheese
  • 1 cup heavy whipping cream
  • 0.5 cup sugar for cream
  • 1 tsp vanilla extract
  • 0.25 cup Amaretto liqueur
  • 1 cup brewed espresso cooled
  • cocoa powder for dusting

Method
 

  1. Simmer cherries with sugar for 5–7 minutes until syrupy; cool completely.
  2. Combine brewed espresso with Amaretto and let cool.
  3. Beat mascarpone with sugar, vanilla, and remaining Amaretto until smooth.
  4. Whip heavy cream to soft peaks and fold into mascarpone mixture.
  5. Dip ladyfingers quickly into espresso mixture and layer in dish.
  6. Spread mascarpone cream over ladyfingers.
  7. Add a layer of cherry compote.
  8. Repeat layers until ingredients are used and refrigerate 4 hours or overnight.
  9. Dust with cocoa powder before serving.

Notes

Best made a day ahead to deepen flavor. Add almond slices for texture.
