- Simmer cherries with sugar for 5–7 minutes until syrupy; cool completely.
- Combine brewed espresso with Amaretto and let cool.
- Beat mascarpone with sugar, vanilla, and remaining Amaretto until smooth.
- Whip heavy cream to soft peaks and fold into mascarpone mixture.
- Dip ladyfingers quickly into espresso mixture and layer in dish.
- Spread mascarpone cream over ladyfingers.
- Add a layer of cherry compote.
- Repeat layers until ingredients are used and refrigerate 4 hours or overnight.
- Dust with cocoa powder before serving.
Notes
Best made a day ahead to deepen flavor. Add almond slices for texture.
