Ingredients
  

Cherry Filling
  • 2 cups cherries pitted
  • 0.33 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 0.5 tsp vanilla extract
Mascarpone Cream
  • 1.5 cups heavy whipping cream cold
  • 8 oz mascarpone cheese softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
Assembly
  • 24-30 ladyfinger biscuits
  • 1 cup brewed espresso cooled
  • 2 tbsp cherry liqueur optional
  • cocoa powder for garnish
  • fresh cherries for garnish

Method
 

  1. Cook cherries, sugar, and lemon juice over medium heat until softened.
  2. Stir in cornstarch slurry and cook until thickened. Cool completely.
  3. Whip heavy cream to soft peaks.
  4. Beat mascarpone, powdered sugar, and vanilla until smooth.
  5. Fold whipped cream into mascarpone mixture.
  6. Dip ladyfingers briefly in espresso mixture.
  7. Layer ladyfingers, mascarpone cream, and cherry filling in a dish.
  8. Repeat layers and chill for at least 4 hours.
  9. Garnish with cocoa powder and cherries before serving.

Notes

Best prepared overnight for optimal texture and flavor.
