Method
- Preheat oven to 375°F and grease a 9x13-inch baking dish.
- Mix chicken, cream of chicken soup, sour cream, cheese, onion, and seasonings in a large bowl.
- In another bowl, combine cornbread mix, creamed corn, egg, milk, and butter until just mixed.
- Spread chicken mixture in the baking dish and pour cornbread batter on top.
- Bake for 30–35 minutes until the top is golden and a toothpick comes out clean.
- Optionally, sprinkle cheese on top for the last 5 minutes of baking. Let cool before serving.
Notes
Add diced jalapeños or bacon for extra flavor. Great for meal prep and family dinners.
