Ingredients
  

Chicken Filling
  • 3 cups cooked shredded chicken rotisserie or leftover
  • 1 can cream of chicken soup 10.5 oz
  • 0.5 cup sour cream
  • 0.5 cup shredded cheddar cheese
  • 0.5 cup chopped onion optional
  • 1 tsp garlic powder
  • 0.5 tsp black pepper
  • 0.5 tsp salt
Cornbread Topping
  • 1 box cornbread mix 8.5 oz
  • 1 can creamed corn 14.75 oz
  • 1 large egg
  • 1/3 cup milk
  • 2 tbsp melted butter
  • 0.5 cup shredded cheddar cheese optional topping

Equipment

  • Mixing bowls
  • 9×13 inch baking dish
  • Wooden spoon

Method
 

  1. Preheat oven to 375°F and grease a 9x13-inch baking dish.
  2. Mix chicken, cream of chicken soup, sour cream, cheese, onion, and seasonings in a large bowl.
  3. In another bowl, combine cornbread mix, creamed corn, egg, milk, and butter until just mixed.
  4. Spread chicken mixture in the baking dish and pour cornbread batter on top.
  5. Bake for 30–35 minutes until the top is golden and a toothpick comes out clean.
  6. Optionally, sprinkle cheese on top for the last 5 minutes of baking. Let cool before serving.

Notes

Add diced jalapeños or bacon for extra flavor. Great for meal prep and family dinners.
