Ingredients
  

  • 1 1/2 lbs boneless, skinless chicken thighs
  • 4 cups chicken broth
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 tbsp unsalted butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup unsalted butter cold, cubed
  • 3/4 cup milk

Method
 

  1. Melt butter in pot over medium heat. Sear chicken 3–4 minutes per side. Remove and set aside.
  2. Sauté onion, carrots, celery, and garlic 5 minutes until softened.
  3. Add chicken broth, thyme, parsley, salt, and pepper. Return chicken. Simmer 20 minutes, then shred chicken.
  4. Mix flour, baking powder, and salt. Cut in butter, stir in milk until combined to form dumpling dough.
  5. Drop spoonfuls of dumpling dough onto simmering stew. Cover and cook 15 minutes without lifting lid.
  6. Ensure dumplings are cooked through. Adjust seasoning. Serve hot.

Notes

Do not lift lid while dumplings cook for fluffy texture. Shred chicken finely for even distribution.
