Chicken & Garlic Gravy
  • 1.5 lbs chicken breasts or thighs
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 6 cloves garlic minced
  • 2 tbsp flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp paprika
Cheesy Mashed Potatoes
  • 3 lbs potatoes Yukon gold or russet
  • 4 tbsp butter
  • 1 cup milk or cream
  • 1.5 cups shredded cheese cheddar or mozzarella
  • 1 tsp salt
  • 0.5 tsp pepper

Method
 

  1. Boil potatoes until tender, then mash with butter, milk, cheese, salt, and pepper.
  2. Season chicken and sear in hot skillet until golden; remove and set aside.
  3. Melt butter and sauté garlic for 1 minute.
  4. Whisk in flour, then slowly add broth and cream to form gravy.
  5. Season gravy and return chicken to simmer until cooked through.
  6. Serve chicken over cheesy mashed potatoes with extra gravy.

Notes

For extra richness, add cream cheese to the mashed potatoes.
