Ingredients
  

  • 2 boneless skinless chicken breasts grilled and sliced
  • 6 cups romaine lettuce chopped
  • 1/2 cup Caesar dressing store-bought or homemade
  • 1/2 cup Parmesan cheese freshly grated
  • 1 cup croutons store-bought or homemade
  • to taste salt and pepper

Method
 

  1. Season chicken breasts with salt and pepper. Grill over medium heat for 6-7 minutes per side or until cooked through.
  2. Let chicken rest, then slice thinly.
  3. In a large bowl, toss chopped romaine lettuce with Caesar dressing.
  4. Add sliced chicken, Parmesan cheese, and croutons. Toss gently to combine.
  5. Serve immediately and enjoy.

Notes

For a lighter option, use a low-fat Caesar dressing or substitute grilled shrimp for chicken.
