  • 6 chicken thighs bone-in, skin-on
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 onion chopped
  • 2 shallots diced
  • 3 cloves garlic minced
  • 2 cups mushrooms sliced
  • 1 cup diced tomatoes
  • 0.75 cup white wine
  • 1 cup chicken stock
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 bay leaf

Equipment

  • Large skillet or Dutch oven
  • Wooden spoon
  • Knife
  • Cutting board

Method
 

  1. Season chicken with salt and pepper.
  2. Sear chicken in olive oil until golden brown, then remove.
  3. Sauté onions, shallots, and garlic in butter.
  4. Add mushrooms and cook until browned.
  5. Deglaze with white wine and reduce slightly.
  6. Add tomatoes, tomato paste, stock, and herbs.
  7. Return chicken to pan and simmer for 30–35 minutes.
  8. Garnish with parsley and serve.

Notes

Serve with mashed potatoes or crusty bread for best results.
