- Season chicken with salt and pepper.
- Sear chicken in olive oil until golden brown, then remove.
- Sauté onions, shallots, and garlic in butter.
- Add mushrooms and cook until browned.
- Deglaze with white wine and reduce slightly.
- Add tomatoes, tomato paste, stock, and herbs.
- Return chicken to pan and simmer for 30–35 minutes.
- Garnish with parsley and serve.
