Chicken Chow Mein with the Best Chow Mein Sauce

Ingredients
  

Cookie Batter
  • 8 oz chow mein noodles
  • 1 lb chicken breast thinly sliced
  • 2 tbsp soy sauce for marinating chicken
  • 1 tbsp cornstarch for chicken
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 cup bean sprouts
  • 3 green onions sliced
  • 3 cloves garlic minced
  • 2 tbsp oil for stir-frying
Filling
  • 3 tbsp soy sauce for sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tbsp sugar
  • 0.5 cup chicken broth
  • 1 tsp cornstarch for sauce
  • 1 pinch white pepper optional

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Cook chow mein noodles according to package instructions. Drain and set aside.
  2. Mix sliced chicken with soy sauce and cornstarch. Set aside to marinate briefly.
  3. Heat 1 tablespoon of oil in a skillet or wok over medium-high heat. Cook chicken until browned and cooked through. Remove from pan.
  4. Add remaining oil. Stir-fry garlic for 20 seconds, then add cabbage and carrots. Cook until slightly softened.
  5. Add bean sprouts and green onions. Stir-fry for 1 minute.
  6. Return chicken to the pan and add cooked noodles.
  7. Pour in chow mein sauce and toss until noodles and veggies are coated and sauce thickens.
  8. Serve hot and garnish as desired.

Notes

For extra flavor, add a splash of soy sauce or a pinch of chili flakes before serving.
