Ingredients
  

Casserole Base
  • 2 lbs chicken breast sliced
  • 2 tbsp olive oil
  • 3 tsp fajita seasoning
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 2 bell peppers sliced
  • 1 onion sliced
  • 6 flour tortillas cut into strips
  • 1 cup sour cream
  • 2 cups shredded cheese Mexican blend or cheddar

  • Aluminum foil

Method
 

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.
  2. Season chicken with oil and spices, then toss with peppers and onions.
  3. Layer tortillas, chicken mixture, sour cream, and cheese in the dish.
  4. Repeat layers and cover with foil.
  5. Bake covered for 25 minutes, then uncover and bake 15–20 minutes until bubbly.
  6. Rest briefly before serving and garnish as desired.

Customize spice level and toppings to taste.
