- Heat olive oil in a skillet over medium-high heat. Add chicken slices and cook 5–7 minutes until browned and cooked through.
- Remove chicken from skillet and set aside.
- Sauté onions, bell peppers, and garlic in the same skillet until soft and slightly caramelized.
- Add smoked paprika, salt, and black pepper, then return chicken to skillet and mix well.
- Preheat oven broiler. Split hoagie rolls and toast lightly for 2–3 minutes.
- Layer chicken and vegetables on rolls, top with cheese, and place under broiler 1–2 minutes until melted and bubbly.
- Serve immediately, optionally with mushrooms or hot sauce.
