Method
- Whisk yogurt, olive oil, lemon juice, garlic, and spices in a large bowl.
- Add chicken thighs and coat evenly. Marinate at least 2 hours or overnight.
- Preheat oven to 425°F (220°C). Line a baking sheet with foil and add a wire rack.
- Arrange chicken on rack and roast for 30–35 minutes, flipping halfway.
- Broil briefly for added color, then rest and slice thinly.
Notes
Serve with pita, garlic sauce, pickles, or over rice for a complete meal.
