Ingredients
  

  • 3 cups shredded chicken breast
  • 1 packet taco seasoning mix
  • 1 cup salsa mild or spicy
  • 1 cup black beans rinsed and drained
  • 1 cup corn kernels
  • 1 cup diced tomatoes drained
  • 2 cups shredded cheddar cheese or Mexican blend
  • 1 cup sour cream optional
  • 2 cups crushed tortilla chips
  • 0.25 cup cilantro chopped, for garnish
  • Lime wedges for serving

Equipment

  • 9×13 inch baking dish

Method
 

  1. Preheat oven to 375°F and grease a 9x13 baking dish.
  2. Mix shredded chicken with taco seasoning and salsa.
  3. Layer crushed tortilla chips, chicken mixture, beans, corn, tomatoes, and cheese in the baking dish.
  4. Repeat layers and finish with cheese on top.
  5. Cover with foil and bake 20 minutes, then uncover and bake 10–15 minutes until bubbly.
  6. Garnish with cilantro and serve with lime wedges.

Notes

For a creamier texture, mix in sour cream or cream cheese before baking.
