  • 6 chicken thighs bone-in, skin-on
  • 2 tbsp olive oil
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cloves garlic minced
  • 1 cup white wine
  • 1 can crushed tomatoes
  • 1 cup chicken broth
  • 2 tbsp tomato paste

Method
 

  1. Season chicken and sear until golden brown.
  2. Cook vegetables until softened.
  3. Deglaze with wine and reduce.
  4. Add tomatoes, broth, and seasoning.
  5. Return chicken and simmer until tender.
