Ingredients
  

Main Ingredients
  • 2 large cucumbers peeled and chopped
  • 1 cup lemon juice freshly squeezed
  • 0.5 cup sugar adjust to taste
  • 4 cups cold water
  • 1 cup ice cubes
  • 10 leaves fresh mint
  • 1 pinch salt optional
  • cucumber slices and lemon rounds for garnish

Equipment

  • Blender
  • Fine mesh strainer
  • Pitcher
  • Citrus juicer

Method
 

  1. Peel and chop cucumbers into chunks.
  2. Blend cucumbers, lemon juice, sugar, and 2 cups of water until smooth.
  3. Strain mixture through a fine mesh strainer if desired.
  4. Transfer to a pitcher and add remaining water. Taste and adjust sweetness or lemon level.
  5. Add mint leaves and chill for 30 minutes.
  6. Serve over ice and garnish with cucumber or lemon slices.

Notes

Adjust sweetness to your preference. Sparkling water can be added for a bubbly version.
