Ingredients
  

Rice Base
  • 4 cups cooked chilled rice
  • 2 tbsp vegetable oil
  • 8 cloves garlic minced
  • 3 red chilies finely chopped
  • 1 carrot diced
  • 1 cup cabbage shredded
  • 1 red bell pepper diced
  • 3 green onions sliced
  • 2 tbsp soy sauce
  • 1 tbsp chili garlic sauce
  • 1 tsp sesame oil
  • 0.5 tsp black pepper
  • 0.5 tsp salt or to taste
  • 1 tbsp rice vinegar
  • 1 tbsp cilantro optional

Equipment

  • Wok or large skillet
  • Mixing bowls

Method
 

  1. Heat oil in a wok over medium-high heat.
  2. Add garlic and chilies and stir-fry until fragrant.
  3. Cook carrots, cabbage, and bell peppers until slightly tender.
  4. Add chilled rice and break apart any clumps.
  5. Pour in soy sauce, chili garlic sauce, sesame oil, pepper, salt, and vinegar.
  6. Stir-fry until the rice is evenly coated and heated through.
  7. Add green onions and cilantro.
  8. Toss well and serve immediately.

Notes

Use day-old rice for the best texture and adjust chilies according to your spice preference.
