Ingredients
  

Chipotle Chicken
  • 1.5 lbs chicken breasts
  • 2 tbsp olive oil
  • 2 chipotle peppers in adobo minced
  • 1 tbsp adobo sauce
  • 2 cloves garlic minced
  • 1 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Bowl Components
  • 3 cups cooked rice
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes or pico de gallo
  • 1 avocado sliced
  • 1 handful cilantro chopped
Creamy Chipotle Sauce
  • 0.5 cup mayonnaise
  • 0.5 cup sour cream or Greek yogurt
  • 1 chipotle pepper minced
  • 1-2 tsp adobo sauce to taste
  • 1 tsp lime juice
  • 0.25 tsp garlic powder
  • 1 pinch salt

Method
 

  1. Mix marinade ingredients and coat chicken thoroughly.
  2. Make creamy chipotle sauce and chill until needed.
  3. Grill chicken 5–6 minutes per side and slice after resting.
  4. Warm black beans, corn, and prepare rice.
  5. Assemble bowls with rice, chicken, beans, corn, tomatoes, and avocado.
  6. Drizzle with creamy chipotle sauce and garnish with cilantro and lime.

Notes

For extra heat, add more adobo or a diced jalapeño.
