  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
Cheesecake Filling
  • 4 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare cookie dough: In a bowl, cream butter and sugar until light and fluffy. Add egg and vanilla, mixing well.
  3. In a separate bowl, whisk flour, cocoa, baking soda, and salt. Gradually mix into wet ingredients until combined.
  4. Prepare cheesecake filling: Beat cream cheese, powdered sugar, and vanilla until smooth.
  5. Form small cookie bases on the baking sheet, top each with a small dollop of cheesecake filling, and cover lightly with more cookie dough.
