- Prepare ganache by heating cream and pouring over chocolate chips. Stir until smooth, add butter, then chill until thick.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk flour, cocoa powder, baking soda, and salt together.
- Beat butter and sugars until fluffy. Add eggs and vanilla, then melted chocolate.
- Mix dry ingredients into wet mixture until combined. Fold in cherries and chocolate chips.
- Flatten dough, add ganache center, seal, and roll into balls.
- Bake 10–12 minutes until edges set. Cool before serving.
