Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.5 cup melted semi-sweet chocolate
  • 0.75 cup chopped dried cherries
  • 0.5 cup chocolate chips
Ganache Filling
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup heavy cream
  • 1 tbsp unsalted butter

Equipment

Method
 

  1. Prepare ganache by heating cream and pouring over chocolate chips. Stir until smooth, add butter, then chill until thick.
  2. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  3. Whisk flour, cocoa powder, baking soda, and salt together.
  4. Beat butter and sugars until fluffy. Add eggs and vanilla, then melted chocolate.
  5. Mix dry ingredients into wet mixture until combined. Fold in cherries and chocolate chips.
  6. Flatten dough, add ganache center, seal, and roll into balls.
  7. Bake 10–12 minutes until edges set. Cool before serving.

Notes

Ensure ganache is thick before stuffing cookies to prevent leaks.
