Ingredients
  

Chocolate Cookie Dough
  • 2 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 1 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 0.5 cup brown sugar
  • 1 egg large
  • 2 tsp vanilla extract
Filling
  • 0.75 cup cherry preserves
Chocolate Drizzle
  • 0.5 cup dark chocolate chips
  • 1 tsp coconut oil or butter

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, cocoa powder, baking powder, and salt in a medium bowl.
  3. Cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg and vanilla extract, mixing until smooth.
  5. Gradually mix dry ingredients into wet ingredients until a soft dough forms.
  6. Roll dough into tablespoon-sized balls and place on prepared baking sheets.
  7. Press a small indentation into the center of each cookie and fill with cherry preserves.
  8. Bake 10–12 minutes until edges are set. Cool for 5 minutes before transferring to wire racks.
  9. Melt chocolate chips with coconut oil until smooth and drizzle over cooled cookies.

Notes

Chill the dough for 20 minutes if it becomes too soft. Store cookies in an airtight container for up to 5 days.
