Batter
  • 3 ripe bananas mashed
  • 0.5 cup unsalted butter melted
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1 tbsp espresso powder
  • 0.33 cup cocoa powder
  • 1.75 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 tsp cinnamon optional
  • 0.5 cup sour cream
  • 0.75 cup chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a loaf pan.
  2. Mash bananas and mix with melted butter and sugars.
  3. Add eggs, vanilla, and espresso powder, mixing well.
  4. Stir in cocoa powder and sour cream until smooth.
  5. Combine dry ingredients separately and fold into batter.
  6. Fold in chocolate chips and transfer to pan.
  7. Bake for 50–60 minutes until set.
  8. Cool completely before slicing and serving.

Notes

Use very ripe bananas for best flavor and moisture. Adjust espresso intensity to taste.
