Ingredients
  

Brownie Batter
  • 1 cup unsalted butter melted
  • 1.75 cups granulated sugar
  • 4 eggs large
  • 1 tbsp vanilla extract
  • 1 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 0.5 tsp salt
  • 0.5 tsp baking powder
Mint Filling
  • 0.5 cup unsalted butter softened
  • 2 cups powdered sugar
  • 2 tbsp heavy cream
  • 0.5 tsp peppermint extract
  • 2-3 drops green food coloring optional
Chocolate Topping
  • 1 cup semi-sweet chocolate chips
  • 0.25 cup heavy cream
  • 1 tbsp butter

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. Whisk melted butter and sugar until smooth.
  3. Add eggs one at a time, mixing well, then stir in vanilla.
  4. Combine cocoa powder, flour, salt, and baking powder.
  5. Mix dry ingredients into the wet mixture until a thick batter forms.
  6. Spread batter into pan and bake for 20–25 minutes.
  7. Beat butter, powdered sugar, cream, peppermint extract, and food coloring until smooth.
  8. Spread mint filling over cooled brownies.
  9. Melt chocolate chips, cream, and butter until smooth.
  10. Spread chocolate topping over mint layer and chill until set.

Notes

For clean slices, chill brownies before cutting and wipe the knife between slices.
