- Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
- Whisk melted butter and sugar until smooth.
- Add eggs one at a time, mixing well, then stir in vanilla.
- Combine cocoa powder, flour, salt, and baking powder.
- Mix dry ingredients into the wet mixture until a thick batter forms.
- Spread batter into pan and bake for 20–25 minutes.
- Beat butter, powdered sugar, cream, peppermint extract, and food coloring until smooth.
- Spread mint filling over cooled brownies.
- Melt chocolate chips, cream, and butter until smooth.
- Spread chocolate topping over mint layer and chill until set.
Notes
For clean slices, chill brownies before cutting and wipe the knife between slices.
