Ingredients
  

Muffin Batter
  • 1 cup fresh spinach packed
  • 2 eggs
  • 0.5 cup milk
  • 0.33 cup oil
  • 0.75 cup sugar
  • 1 tsp vanilla extract
  • 1 cup flour
  • 0.33 cup cocoa powder
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Blend spinach, eggs, milk, oil, sugar, and vanilla until smooth.
  3. Whisk dry ingredients in a bowl.
  4. Combine wet and dry ingredients gently.
  5. Fold in chocolate chips.
  6. Fill muffin cups and top with extra chips.
  7. Bake for 18–22 minutes and cool before serving.
