  • 1.75 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
Wet Ingredients
  • 2 eggs large
  • 0.75 cup brown sugar
  • 0.5 cup granulated sugar
  • 0.5 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup fresh spinach leaves (blended)
  • 0.75 cup milk
Add-Ins
  • 0.75 cup chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. Blend spinach and milk until completely smooth and set aside.
  3. Whisk flour, cocoa powder, baking powder, baking soda, and salt in a bowl.
  4. Beat eggs with both sugars, then add oil and vanilla extract.
  5. Mix spinach-milk blend into wet ingredients until fully combined.
  6. Combine wet and dry ingredients gently until just mixed.
  7. Fold in chocolate chips evenly.
  8. Fill muffin cups ¾ full and bake for 18–22 minutes.
  9. Cool on a wire rack before serving.

Notes

Blend spinach very smoothly to ensure no texture or flavor remains. Do not overmix batter.
