- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Beat cream cheese, sugar, and vanilla until smooth. Chill filling.
- In a bowl, whisk flour, baking soda, salt, and spices.
- In another bowl, beat butter and brown sugar until fluffy. Add egg, vanilla, and molasses.
- Mix in dry ingredients until dough forms.
- Scoop dough balls, flatten slightly, and fill centers with cheesecake filling. Seal and roll again.
- Bake 10–12 minutes until edges are set. Cool on wire rack.
- Sprinkle with cinnamon sugar or crushed ginger snaps, if desired.
