Ingredients
  

Gingerbread Cookie Dough
  • 2.25 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 0.25 tsp cloves
  • 0.25 tsp nutmeg
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.33 cup molasses
  • 1 large egg
  • 1 tsp vanilla extract
Cheesecake Filling
  • 4 oz cream cheese softened
  • 3 tbsp granulated sugar
  • 0.5 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Beat cream cheese, sugar, and vanilla until smooth. Chill filling.
  3. In a bowl, whisk flour, baking soda, salt, and spices.
  4. In another bowl, beat butter and brown sugar until fluffy. Add egg, vanilla, and molasses.
  5. Mix in dry ingredients until dough forms.
  6. Scoop dough balls, flatten slightly, and fill centers with cheesecake filling. Seal and roll again.
  7. Bake 10–12 minutes until edges are set. Cool on wire rack.
  8. Sprinkle with cinnamon sugar or crushed ginger snaps, if desired.

Notes

For best flavor, store cookies chilled and serve at room temperature.
