Ingredients
  

Salad Base
  • 4 cups baby spinach
  • 2 cups arugula
  • 1 cup pomegranate seeds
  • 0.5 cup roasted pecans
  • 0.5 cup feta cheese crumbles
  • 0.25 cup thinly sliced red onion
Honey Mustard Dressing
  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar or lemon juice
  • 0.25 tsp salt
  • 0.125 tsp black pepper freshly ground

Method
 

  1. Rinse and dry baby spinach and arugula. Place in a large salad bowl.
  2. Add pomegranate seeds, roasted pecans, and sliced red onions evenly over the greens.
  3. Top salad with crumbled feta cheese.
  4. Whisk together Dijon mustard, honey, olive oil, and apple cider vinegar. Season with salt and pepper.
  5. Drizzle honey mustard dressing over salad and toss gently to combine.
  6. Garnish with fresh parsley, balsamic glaze, or croutons if desired.
  7. Serve immediately for best freshness and color.

Notes

Dressing can be made 1–2 days ahead. Assemble salad just before serving.
