Ingredients
  

Pizza
  • 1 lb pizza dough room temperature
  • 0.5 cup basil pesto
  • 8 oz fresh mozzarella cheese torn into pieces
  • 1 cup cherry tomatoes halved
  • 0.25 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • salt and pepper to taste
Decoration
  • 0.25 cup fresh basil leaves
  • extra cherry tomatoes for ornaments
  • 1 yellow bell pepper cut into star shape
  • fresh rosemary sprigs optional
Base
  • 2 tbsp cornmeal or flour for dusting
  • cooking spray or olive oil for pan

Equipment

  • Large baking sheet or pizza stone
  • Rolling Pin
  • Pizza cutter or knife
  • Pastry brush

Method
 

  1. Preheat oven to 450°F (230°C). Lightly oil a large baking sheet or pizza stone and dust with cornmeal.
  2. On a lightly floured surface, roll out pizza dough into a large rectangle, approximately 12x16 inches.
  3. Using a knife or pizza cutter, cut the dough into a Christmas tree shape - start with a triangle and add a rectangular trunk at the bottom.
  4. Carefully transfer the tree-shaped dough to the prepared baking sheet.
  5. Brush the dough lightly with olive oil and sprinkle with garlic powder, salt, and pepper.
  6. Par-bake the shaped dough for 8-10 minutes until just set but not browned.
  7. Remove from oven and spread pesto evenly over the surface, leaving a small border around the edges.
  8. Distribute torn mozzarella pieces across the tree, concentrating more cheese toward the center and less near the edges.
  9. Arrange halved cherry tomatoes strategically as 'ornaments,' spacing them evenly across the tree.
  10. Sprinkle grated Parmesan cheese over the entire surface for extra flavor and golden color.
  11. Return to oven and bake for 12-15 minutes until cheese is melted and bubbly, and edges are golden brown.
  12. Remove from oven and immediately garnish with fresh basil leaves placed like additional decorations.
  13. Cut a star shape from yellow bell pepper and place at the top of the tree as the 'star.'
  14. Add small rosemary sprigs around the base if desired to simulate grass or additional greenery.
  15. Let cool for 5 minutes before slicing and serving to allow cheese to set slightly.

Notes

Use room temperature dough for easier shaping. Can make multiple smaller trees for individual servings. Best served immediately while cheese is still warm and melty.
