Ingredients
  

For the Salad
  • 6 cups mixed greens romaine, butter lettuce, or baby greens
  • 2 cups chicken breast grilled or roasted, sliced
  • 4 slices bacon cooked crisp and crumbled
  • 2 hard-boiled eggs quartered
  • 1 ripe avocado sliced
  • 1 cup cherry tomatoes halved
  • 0.5 cup blue cheese crumbled
  • 2 tbsp fresh chives chopped
  • salt and pepper to taste
For the Dressing
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 0.5 tsp honey optional
  • 0.5 clove garlic finely grated

Equipment

  • Mixing bowls

Method
 

  1. Wash and dry salad greens and spread them on a serving platter.
  2. Arrange chicken, bacon, eggs, avocado, tomatoes, and blue cheese in neat rows over greens.
  3. Whisk together olive oil, red wine vinegar, Dijon mustard, honey, garlic, salt, and pepper.
  4. Drizzle dressing over the salad or serve it on the side.
  5. Sprinkle with chives and serve immediately.

Notes

For a lighter version, use grilled shrimp or turkey bacon. You can also swap blue cheese for feta or goat cheese.
