Method
- Season and sear beef in olive oil until browned. Remove and set aside.
- Sauté onion and garlic until softened.
- Stir in tomato paste and flour; cook briefly.
- Deglaze with Guinness and simmer for several minutes.
- Return beef and add vegetables, broth, and seasonings.
- Simmer covered for 90–120 minutes until tender.
- Adjust seasoning, garnish with parsley, and serve.
Notes
Stew tastes even better the next day. Store refrigerated up to 4 days.
