Ingredients
  

Stew
  • 2.5 lbs beef chuck cubed
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 carrots chunked
  • 3 potatoes cubed
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 2 tbsp flour
  • 12 oz Guinness stout
  • 3 cups beef broth
  • 2 tsp fresh thyme
  • 1 bay leaf
  • 1 tsp Worcestershire sauce

Method
 

  1. Season and sear beef in olive oil until browned. Remove and set aside.
  2. Sauté onion and garlic until softened.
  3. Stir in tomato paste and flour; cook briefly.
  4. Deglaze with Guinness and simmer for several minutes.
  5. Return beef and add vegetables, broth, and seasonings.
  6. Simmer covered for 90–120 minutes until tender.
  7. Adjust seasoning, garnish with parsley, and serve.

Notes

Stew tastes even better the next day. Store refrigerated up to 4 days.
