Ingredients
  

Salad
  • 3 cups cooked chicken breast diced or shredded
  • 1 cup apples diced
  • 1 cup red seedless grapes halved
  • 0.5 cup celery thinly sliced
  • 0.5 cup walnuts toasted and chopped
Dressing
  • 0.5 cup mayonnaise
  • 1 tbsp lemon juice fresh
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp fresh parsley optional garnish

Method
 

  1. Dice or shred cooked chicken into bite-size pieces.
  2. Dice apples, slice celery, and halve the grapes.
  3. Toast walnuts in a dry skillet over medium heat for 3–4 minutes until fragrant, then cool.
  4. In a bowl, whisk together mayonnaise, lemon juice, salt, and black pepper.
  5. Add chicken, apples, grapes, celery, and walnuts to the bowl.
  6. Gently toss everything together until evenly coated.
  7. Taste and adjust seasoning if needed.
  8. Chill for 30 minutes before serving for best flavor.
  9. Serve on lettuce leaves, sandwiches, or wraps.

Notes

For a lighter version, substitute half the mayonnaise with Greek yogurt.
