Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together flour, baking powder, and salt.
- Cream butter and sugar until light and fluffy. Beat in egg, vanilla, and almond extract.
- Add dry ingredients and mix until dough forms. Roll dough between parchment sheets and chill for 1 hour.
- Cut out cookie shapes and arrange on baking sheets.
- Bake for 8–10 minutes and cool completely.
- For icing, whisk powdered sugar and meringue powder, adding warm water until desired consistency is reached.
- Decorate cookies with royal icing and allow to fully dry before storing.
Notes
Chill rolled dough to prevent spreading. Use gel coloring for the best icing results.
