Ingredients
  

Soup Base
  • 3 tbsp unsalted butter
  • 3 leeks sliced
  • 2 cloves garlic minced
  • 1.5 lb potatoes peeled and diced
  • 4 cups broth
  • 1 cup heavy cream

  • Immersion blender

Method
 

  1. Melt butter in a large pot and gently cook leeks until soft.
  2. Add garlic and cook briefly until fragrant.
  3. Add potatoes, broth, salt, and pepper. Simmer until tender.
  4. Blend soup until smooth using an immersion blender.
  5. Stir in cream, adjust seasoning, and serve warm.

Notes

For extra smooth texture, strain after blending.
