- Combine rolled oats, chia seeds, shredded coconut, and graham cracker crumbs in a bowl or mason jar.
- Add coconut milk, Greek yogurt, maple syrup, vanilla extract, coconut extract, and salt.
- Stir thoroughly until all ingredients are evenly combined.
- Cover and refrigerate overnight or for at least 6 hours.
- Stir before serving and adjust consistency with extra coconut milk if desired.
- Top with toasted coconut flakes, whipped cream, and extra graham cracker crumbs before serving.
Notes
For extra richness, use full-fat coconut milk. Store in airtight jars for up to 4 days.
