Ingredients
  

Overnight Oats Base
  • 1 cup old-fashioned rolled oats
  • 1 cup light coconut milk
  • 0.5 cup vanilla Greek yogurt
  • 2 tbsp chia seeds
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 0.25 tsp coconut extract
  • 0.25 cup sweetened shredded coconut
  • 2 tbsp graham cracker crumbs
  • 1 tbsp toasted coconut flakes for topping
  • 1 pinch salt
  • whipped cream optional garnish

Method
 

  1. Combine rolled oats, chia seeds, shredded coconut, and graham cracker crumbs in a bowl or mason jar.
  2. Add coconut milk, Greek yogurt, maple syrup, vanilla extract, coconut extract, and salt.
  3. Stir thoroughly until all ingredients are evenly combined.
  4. Cover and refrigerate overnight or for at least 6 hours.
  5. Stir before serving and adjust consistency with extra coconut milk if desired.
  6. Top with toasted coconut flakes, whipped cream, and extra graham cracker crumbs before serving.

Notes

For extra richness, use full-fat coconut milk. Store in airtight jars for up to 4 days.
