Ingredients
  

Soup Base
  • 1 tbsp vegetable oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp red curry paste
  • 4 cups broth
  • 1 can coconut milk
Dumplings
  • 1 cup flour
  • 1 tsp baking powder
  • 0.5 tsp salt

Method
 

  1. Heat oil and sauté onion, garlic, and ginger.
  2. Add curry paste and cook until fragrant.
  3. Pour in broth and coconut milk, simmer.
  4. Add vegetables and cook until tender.
  5. Prepare dumpling dough and drop into soup.
  6. Cover and cook until dumplings are fluffy.
