Ingredients
  

Soup
  • 1 tbsp coconut oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp red curry paste
  • 1 tbsp curry powder
  • 1 red bell pepper sliced
  • 2 carrots sliced
  • 4 cups broth vegetable or chicken
  • 14 oz coconut milk full-fat
  • 1 tbsp soy sauce
  • 1 tsp lime juice
  • 0.5 tsp salt adjust to taste
  • 0.5 tsp black pepper
  • 2 cups baby spinach
Dumplings
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 2 tbsp butter cold and cubed
  • 0.5 cup milk

Equipment

Method
 

  1. Mix flour, baking powder, and salt. Cut in cold butter, then add milk to form a soft dumpling dough.
  2. Heat coconut oil and sauté onion until softened.
  3. Add garlic and ginger; cook until fragrant.
  4. Stir in red curry paste and curry powder.
  5. Add bell pepper and carrots and stir to coat.
  6. Pour in broth and coconut milk. Add soy sauce, lime juice, salt, and pepper.
  7. Simmer and drop in spoonfuls of dumpling dough. Cover and cook until dumplings are fluffy.
  8. Stir in spinach and let wilt. Serve hot with cilantro.

Notes

Add chili oil or extra lime for brightness.
