- Mix flour, baking powder, and salt. Cut in cold butter, then add milk to form a soft dumpling dough.
- Heat coconut oil and sauté onion until softened.
- Add garlic and ginger; cook until fragrant.
- Stir in red curry paste and curry powder.
- Add bell pepper and carrots and stir to coat.
- Pour in broth and coconut milk. Add soy sauce, lime juice, salt, and pepper.
- Simmer and drop in spoonfuls of dumpling dough. Cover and cook until dumplings are fluffy.
- Stir in spinach and let wilt. Serve hot with cilantro.
