- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together cornmeal, flour, baking powder, baking soda, and salt.
- Cream butter, sugar, and honey until fluffy.
- Add egg and vanilla extract, mixing well.
- Gradually combine dry ingredients with wet ingredients, alternating with buttermilk.
- Scoop dough onto baking sheets and flatten slightly.
- Bake 10–12 minutes until lightly golden.
- Cool completely on wire racks.
- Prepare glaze and drizzle over cookies if desired.
