Ingredients
  

Cookie Batter
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 0.25 cup honey
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.5 cup buttermilk
Honey Glaze
  • 1 cup powdered sugar
  • 2 tbsp honey
  • 1-2 tbsp milk

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together cornmeal, flour, baking powder, baking soda, and salt.
  3. Cream butter, sugar, and honey until fluffy.
  4. Add egg and vanilla extract, mixing well.
  5. Gradually combine dry ingredients with wet ingredients, alternating with buttermilk.
  6. Scoop dough onto baking sheets and flatten slightly.
  7. Bake 10–12 minutes until lightly golden.
  8. Cool completely on wire racks.
  9. Prepare glaze and drizzle over cookies if desired.

Notes

For extra flavor, drizzle with honey glaze or serve with whipped honey butter.
