- Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
- Blend eggs and cottage cheese until smooth and frothy.
- Pour mixture into bowl and stir in seasonings, vegetables, and shredded cheese.
- Fill muffin cups 3/4 full.
- Bake 20–25 minutes until set and lightly golden.
- Cool 5 minutes before removing from pan and serving.
