Ingredients
  

Egg Base
  • 8 eggs large
  • 1 cup cottage cheese full-fat
  • 1 cup cheddar cheese shredded
  • 0.5 cup bell peppers diced
  • 0.5 cup spinach chopped
  • 2 tbsp onion finely diced
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. Blend eggs and cottage cheese until smooth and frothy.
  3. Pour mixture into bowl and stir in seasonings, vegetables, and shredded cheese.
  4. Fill muffin cups 3/4 full.
  5. Bake 20–25 minutes until set and lightly golden.
  6. Cool 5 minutes before removing from pan and serving.

Notes

For best texture, blend cottage cheese thoroughly and avoid overbaking.
