A lighter, high-protein twist on classic Italian tiramisu made with blended cottage cheese and espresso-soaked ladyfingers.

Ingredients
  

Cream Filling
  • 2 cups cottage cheese full-fat
  • 1 cup mascarpone cheese
  • 0.5 cup maple syrup
  • 1 tsp vanilla extract
  • 1 pinch salt
Layers
  • 1 cup espresso cooled
  • 2 tbsp coffee liqueur optional
  • 24 ladyfinger cookies
  • 2 tbsp cocoa powder
  • 0.25 cup dark chocolate grated

Equipment

  • 9x9-inch glass dish
  • Hand mixer or stand mixer

Method
 

  1. Blend cottage cheese until completely smooth.
  2. Beat blended cottage cheese with mascarpone, maple syrup, vanilla, and salt until fluffy.
  3. Combine espresso and coffee liqueur in a shallow bowl.
  4. Quickly dip ladyfingers in espresso mixture.
  5. Layer soaked ladyfingers in dish and spread half the cream mixture on top.
  6. Repeat with remaining ladyfingers and cream.
  7. Refrigerate at least 4 hours or overnight.
  8. Dust with cocoa powder and garnish with grated chocolate before serving.

Notes

For best flavor, chill overnight. Use full-fat cottage cheese for optimal creaminess.
