Ingredients
  

Chicken Skewers
  • 2 lbs chicken breast or thighs cut into chunks
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
Cowboy Butter Sauce
  • 0.5 cup unsalted butter melted
  • 3 garlic cloves minced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp chili flakes
  • 1 tsp smoked paprika
  • 0.5 tsp cayenne pepper optional
  • 1 tbsp fresh parsley chopped
  • 1 tsp fresh thyme
  • salt to taste

Equipment

Method
 

  1. Cut chicken into even chunks and season with olive oil, salt, pepper, paprika, garlic powder, and onion powder.
  2. Thread chicken onto skewers evenly, leaving small gaps between pieces.
  3. Preheat grill or grill pan to medium-high heat and oil the grates lightly.
  4. Grill skewers for 10–15 minutes, turning occasionally until fully cooked and charred.
  5. In a bowl, mix melted butter with garlic, Dijon, lemon juice, zest, spices, and herbs.
  6. Brush cowboy butter generously over hot skewers before serving.
  7. Serve immediately with extra sauce on the side.

Notes

Best served fresh off the grill for maximum juiciness and flavor.
