Method
- Heat olive oil in a large pot. Cook sausage until browned, then remove and set aside.
- Add onion, carrots, and celery to the pot. Sauté until softened.
- Add garlic, thyme, oregano, and paprika. Cook until fragrant.
- Pour in broth, add beans, and return sausage to the pot. Simmer for 25 minutes.
- Partially blend the soup using an immersion blender for a creamy texture.
- Stir in cream and season with salt and pepper. Heat gently before serving.
