Ingredients
  

Soup Base
  • 1 lb Italian sausage mild or spicy, casings removed
  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 4 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 0.5 tsp smoked paprika
  • 4 cups chicken or vegetable broth
  • 2 cans white beans drained and rinsed
  • 1 cup heavy cream or half-and-half
  • salt and pepper to taste
Garnish
  • fresh parsley chopped
  • olive oil for drizzling

Method
 

  1. Heat olive oil in a large pot. Cook sausage until browned, then remove and set aside.
  2. Add onion, carrots, and celery to the pot. Sauté until softened.
  3. Add garlic, thyme, oregano, and paprika. Cook until fragrant.
  4. Pour in broth, add beans, and return sausage to the pot. Simmer for 25 minutes.
  5. Partially blend the soup using an immersion blender for a creamy texture.
  6. Stir in cream and season with salt and pepper. Heat gently before serving.

Notes

Serve with crusty bread. Add spinach or kale for extra nutrition.
