Method
- Brown the sausage in olive oil over medium heat. Remove and set aside.
- Sauté onion, garlic, carrots, and celery until softened.
- Add thyme, smoked paprika, salt, and pepper. Cook 1 minute.
- Pour in broth, add beans and bay leaf. Stir well.
- Simmer for 20 minutes over low heat.
- Add heavy cream and return sausage to the pot.
- Stir in spinach until wilted. Remove bay leaf.
- Serve hot with fresh parsley.
Notes
For extra thickness, mash some of the beans before adding them.
