Cozy One-Pot Lasagna Soup

A quick and comforting one-pot soup that tastes just like classic lasagna, loaded with meat, noodles, and cheese.

Ingredients
  

Soup Base
  • 1 lb ground beef or Italian sausage
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 28 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 4 cups chicken broth
  • 8 oz uncooked lasagna noodles broken into pieces
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp crushed red pepper flakes optional
  • salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • fresh basil for garnish

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Measuring cups and spoons
  • Knife and cutting board

Method
 

  1. In a large pot, brown ground beef over medium heat.
  2. Add diced onion and cook until softened, then stir in minced garlic for 1 minute.
  3. Mix in crushed tomatoes, tomato paste, oregano, basil, red pepper flakes, salt, and pepper.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Add broken lasagna noodles and simmer 10–12 minutes until noodles are tender.
  6. Stir in ricotta, half of the mozzarella, and half of the Parmesan until creamy.
  7. Ladle into bowls and top with remaining cheeses and fresh basil. Serve hot.

Notes

Can add vegetables like zucchini or spinach for extra nutrients. Adjust spice level as desired.
