Ingredients
  

Soup Base
  • 1 tbsp olive oil
  • 1 lb ground beef or Italian sausage
  • 1 small onion diced
  • 4 cloves garlic minced
  • 2 tbsp tomato paste
  • 28 oz crushed tomatoes
  • 14 oz diced tomatoes
  • 4 cups chicken or beef broth
  • 8 lasagna noodles broken
Cheese & Finish
  • 0.5 cup ricotta cheese
  • 1.5 cups mozzarella cheese shredded
  • 0.25 cup Parmesan cheese grated

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Ladle

Method
 

  1. Heat olive oil in a large pot and brown the meat.
  2. Add onion and garlic; cook until softened.
  3. Stir in tomato paste, seasonings, tomatoes, and broth.
  4. Add broken lasagna noodles and simmer until tender.
  5. Stir in ricotta cheese and adjust seasoning.
  6. Serve topped with mozzarella, Parmesan, and fresh herbs.

Notes

Add extra broth when reheating as noodles absorb liquid.
