Ingredients
  

Stuffed Mushrooms
  • 20-24 medium white or cremini mushrooms
  • 1 cup lump crab meat drained
  • 4 oz cream cheese softened
  • 0.25 cup mayonnaise
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp lemon juice
  • 2 cloves garlic minced
  • 0.25 tsp paprika
  • 0.5 tsp Old Bay seasoning optional
  • 2 tbsp fresh parsley chopped
  • 0.5 cup breadcrumbs divided
  • 2 tbsp butter melted
  • salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C) and prepare a baking sheet.
  2. Clean mushrooms and remove stems. Finely chop stems.
  3. Sauté mushroom stems and garlic in butter until soft, then cool.
  4. In a bowl, mix crab meat, cream cheese, mayo, Parmesan, lemon juice, paprika, Old Bay, parsley, and cooled mushroom mix.
  5. Stuff each mushroom cap generously with the mixture.
  6. Mix breadcrumbs with melted butter and sprinkle over tops.
  7. Bake for 20–25 minutes or until golden brown and bubbly.
  8. Garnish with parsley and serve warm.

Notes

Can be prepped ahead and baked before serving.
