Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 cup cranberry sauce whole berry preferred
  • 6 oz brie cheese sliced
  • 1 tbsp olive oil
  • 1 tbsp fresh rosemary chopped
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp honey optional glaze
  • 1 tbsp balsamic vinegar optional glaze

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking dish with parchment paper.
  2. Slice each chicken breast horizontally to form a pocket, being careful not to cut all the way through.
  3. Rub chicken with olive oil, rosemary, garlic powder, salt, and pepper.
  4. Stuff each chicken breast with cranberry sauce and slices of brie cheese.
  5. Seal with toothpicks or kitchen twine to hold the filling in place.
  6. Optional: Sear chicken in a skillet 2 minutes per side for golden color.
  7. Bake 20–25 minutes or until internal temperature reaches 165°F (74°C).
  8. For glaze, mix honey and balsamic vinegar; brush during final 5 minutes of baking.
  9. Remove from oven, rest for 5 minutes, discard toothpicks, and serve warm.

Notes

Pair with mashed potatoes or roasted vegetables. Optional honey-balsamic glaze adds depth of flavor.
