Method
- Preheat oven to 400°F (200°C) and line a baking dish with parchment paper.
- Slice each chicken breast horizontally to form a pocket, being careful not to cut all the way through.
- Rub chicken with olive oil, rosemary, garlic powder, salt, and pepper.
- Stuff each chicken breast with cranberry sauce and slices of brie cheese.
- Seal with toothpicks or kitchen twine to hold the filling in place.
- Optional: Sear chicken in a skillet 2 minutes per side for golden color.
- Bake 20–25 minutes or until internal temperature reaches 165°F (74°C).
- For glaze, mix honey and balsamic vinegar; brush during final 5 minutes of baking.
- Remove from oven, rest for 5 minutes, discard toothpicks, and serve warm.
Notes
Pair with mashed potatoes or roasted vegetables. Optional honey-balsamic glaze adds depth of flavor.
