Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
Sauce
  • 2 garlic cloves minced
  • 1 cup cranberries fresh or frozen
  • 0.75 cup orange juice fresh
  • 1 tbsp orange zest
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tsp rosemary chopped

Method
 

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet and sear chicken until golden on both sides. Remove and set aside.
  3. Sauté garlic in the same skillet until fragrant.
  4. Add cranberries, orange juice, orange zest, honey, soy sauce, and rosemary. Simmer until cranberries burst.
  5. Return chicken to the pan, cover, and simmer until cooked through.
  6. Serve hot with sauce spooned over the chicken.

Notes

Adjust sweetness by adding more honey if desired.
