Ingredients
  

Loaf Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup granulated sugar
  • 0.5 cup unsalted butter melted
  • 2 eggs large
  • 1 tsp vanilla extract
  • 2 tbsp orange zest
  • 0.5 cup fresh orange juice
  • 0.5 cup milk
  • 1.5 cups cranberries fresh or frozen
Orange Glaze
  • 1 cup powdered sugar
  • 2-3 tbsp orange juice
  • 0.5 tsp orange zest

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk flour, baking powder, baking soda, and salt in a bowl.
  3. In another bowl mix sugar and melted butter until smooth.
  4. Add eggs, vanilla extract, orange zest, and orange juice. Mix well.
  5. Alternate adding dry ingredients and milk until batter is combined.
  6. Fold in cranberries gently.
  7. Pour batter into loaf pan and smooth the top.
  8. Bake 50–60 minutes until a toothpick comes out clean.
  9. Cool completely on a wire rack.
  10. Whisk glaze ingredients together and drizzle over the cooled loaf.

Notes

Use frozen cranberries directly without thawing for best texture.
